The lights are out, the lights out! The electricity has been off since 3 AM this morning in my neighborhood, across the street, and throughout the stores in the area. Stores are closed and there are police cars guarding them to make sure no one tries to break in and steal anything. On top of that, it’s been raining for the last few days so parts of the community is flooded! It’s been a crazy weekend, but you gotta make the most of it… don’t you agree? So what do you do when the power is out and it’s a rainy day? Well, some of us will resort, lighting, candles, and eating leftovers, or digging through our pantry to see what kind of chips and cookies we can binge on. Not in this house! I enjoy cooking, but my mom loves it more. So what does she cook? Sinigang! Sinigang is a Filipino soup dish with a sour and savory taste. It’s a very easy dish to cook. So easy I tell people just look at the picture on the powder packet and get those ingredients, put them in water and add the powder. Of course there’s a few things that you want to do when making this dish. You can use any protein, such as beef, pork, fish, shrimp, or even tofu. Like any soup, remove any fat that builds up on the top when cooking the protein. Cook your protein until it’s tender, add the soup powder (picture at the bottom - Tamarind). Then your veggies - I like using gabi (taro) instead of regular potatoes, but either one works - put this first in the soup since it takes longer to soften than the other veggies put after. Most common veggies that are used include spinach, long beans, tomatoes, onion, and eggplants. Sometimes I like to use bok choy or add broccoli out of all the ingredients, though, you need the tamarind soup powder. I like the Pamana Tamarind Soup powder.
